Easy chicken lo mein is glossy, savory, and full of tender chicken, crisp vegetables, and saucy noodles — a better-than-takeout meal in 30 minutes.


Ingredients

Scale
  • 8 oz lo mein noodles or spaghetti

  • 1 lb chicken breast or thighs, thinly sliced

  • 1 tbsp soy sauce (for marinade)

  • 1 tsp cornstarch (for marinade)

  • 1 tbsp oil + more for cooking

  • 2 cups mixed vegetables (carrots, peppers, cabbage, etc.)

  • 1 tsp garlic, minced

  • 1 tsp ginger, minced

Sauce:

  • 3 tbsp soy sauce

  • 2 tbsp oyster sauce

  • 1 tbsp dark soy sauce (optional)

  • 1 tbsp brown sugar or honey

  • 1 tsp sesame oil

  • 2 tsp cornstarch

  • 2 tbsp water


Instructions

  • Cook noodles and toss with a little oil.

  • Marinate chicken with soy sauce and cornstarch for 10 minutes.

  • Whisk together sauce ingredients and set aside.

  • Stir-fry chicken until golden; remove from pan.

  • Sauté garlic, ginger, and vegetables for 2–3 minutes.

  • Add noodles, chicken, and sauce. Toss and cook 1–2 minutes.

  • Garnish with green onions or sesame seeds. Serve hot.

  • Use tofu or shrimp instead of chicken.
