Easy chicken lo mein is glossy, savory, and full of tender chicken, crisp vegetables, and saucy noodles — a better-than-takeout meal in 30 minutes.
Ingredients

8 oz lo mein noodles or spaghetti

1 lb chicken breast or thighs, thinly sliced

1 tbsp soy sauce (for marinade)

1 tsp cornstarch (for marinade)

1 tbsp oil + more for cooking

2 cups mixed vegetables (carrots, peppers, cabbage, etc.)

1 tsp garlic, minced

1 tsp ginger, minced
Sauce:

3 tbsp soy sauce

2 tbsp oyster sauce

1 tbsp dark soy sauce (optional)

1 tbsp brown sugar or honey

1 tsp sesame oil

2 tsp cornstarch

2 tbsp water
Instructions

Cook noodles and toss with a little oil.

Marinate chicken with soy sauce and cornstarch for 10 minutes.

Whisk together sauce ingredients and set aside.

Stir-fry chicken until golden; remove from pan.

Sauté garlic, ginger, and vegetables for 2–3 minutes.

Add noodles, chicken, and sauce. Toss and cook 1–2 minutes.

Garnish with green onions or sesame seeds. Serve hot.
