Description

This crème brûlée French toast is a rich, custardy baked breakfast with a caramelized sugar topping and soft, creamy center—perfect for special brunches or holiday mornings.


Ingredients

  • 68 slices brioche, 1-inch thick

  • ½ cup unsalted butter

  • ¾ cup brown sugar

  • 6 egg yolks

  • 1½ cups heavy cream

  • ½ cup whole milk

  • ½ cup granulated sugar

  • 1 tbsp vanilla extract

  • Turbinado or granulated sugar for brûlée topping


Instructions

  • Melt butter and brown sugar in a saucepan. Pour into a 9×13-inch dish.

  • Arrange bread slices in dish over caramel.

  • In a bowl, whisk egg yolks, cream, milk, sugar, and vanilla.

  • Pour custard over bread, press gently. Refrigerate 2 hours or overnight.

  • Preheat oven to 350°F. Bake uncovered 35–40 minutes until set and golden.

  • Sprinkle sugar on top and caramelize with torch or broiler.

  • Serve warm with fresh fruit or whipped cream.

Notes

Let rest after baking for easier slicing. Use day-old bread for best soak. Make in ramekins for individual portions.
