Ingredients

1.5 lbs chicken thighs or breast

3–4 medium potatoes, peeled and cubed

1 onion, chopped

2 carrots, sliced

2 celery stalks, diced

3 garlic cloves, minced

6 cups chicken broth

1 tsp dried thyme

1 bay leaf

Salt and pepper, to taste

1 tbsp olive oil

Optional: ½ cup cream or 1 tbsp lemon juice

Fresh parsley, chopped
Instructions

Sauté onion, carrots, and celery in olive oil for 5–6 minutes.

Add garlic, thyme, and bay leaf; cook 1–2 minutes more.

Add chicken and broth; bring to a boil, then simmer.

Add potatoes and cook 20–25 minutes until tender.

Remove chicken, shred, and return to pot.

Season to taste; stir in cream or lemon juice if using.

Garnish with parsley and serve hot.
Notes
Great for freezing or meal prep. Use rotisserie chicken to save time. Add spinach or kale for extra greens.
